Nice to see they're thinking of using tofu in school lunches (in Vermont anyway) but I think the chef didn't do much to convince people how VERSATILE tofu is... he was all about the "traditional" or "stereotyped" use for tofu - Chinese and stirfrying it with a sauce.
There are SO MANY other wonderful - and kid frendly - ways to enjoy tofu... too bad they didn't address those other methods in more detail.

Oh well, it's a start.
We were lucky, my daughter's daycare provided excellent vegetarian food for her every day, and a veggie lunch for all the kids at least twice a week.
I became friends with the cook, who has a little girl the same age as mine... they are not in the same school now but we still see each ther regularly during the weekend and the girls go on (vegetarian) sleepovers.
It's still pretty exceptional though, even in this rather tolerant country (as far as food is concerned) !
That's cool! I hope more schools start to do that!
