The last time I was a vegetarian, I didn't eat very balanced meals at all because I didn't know about all the nutrients/vitamins that I needed that I originally got from meat. So, I was wondering what kind of meals you all eat that are balanced, but not extremely hard to make. Your help would be greatly appriciated! :D
I suggest taking a look at this thread (see below). It's where users log the (ideally) good things they ate that day. It's great not only for support but for getting ideas on what to eat. :yes:

i'm a big fan of stews and stir fries...generally 1 dish meals that have a good assortment of ingredients. stews are good with a whole grain bread. a stir fry over some brown rice. the larger the assortment of foods you eat, the more likely you'll be covered.
