"Mandarin" Rice

This recipe is suitable for a: vegetarian or vegan diet

Category: Main Dishes - Rice




Ingredients:

1.5 cups brown rice
1.5 cups water
11 0z. can Mandarin oranges, undrained
tsp olive oil
3 cloves garlic, minced
tsp each of ginger, cinnamon, nutmeg, cumin
about 5 drops hot sauce (or more if you like things spicy)
broccoli, peas, edamame, or whatever veggies you have
Braggs or soy sauce
sesame oil
black pepper




Instructions:

1. In a large saucepan, preheat olive oil.
2. Add garlic and spices and saute for about 30 seconds.
3. Add oranges, cover, and heat for about a minute.
4. Add rice rice and water and bring to a boil.
5. Lower heat and let rice simmer until 75% of the water is absorbed.
6. Add vegetables and hot sauce and let rice finish cooking.
7. Drizzle with sesame oil, squirt with Braggs, sprinkle with black pepper, serve, and enjoy.

I just got a new cooktop, so I wanted to try it out last night. I didn't have many ingredients on hand, so I dug in the pantry and this dish was the result. Sometime I might want to try adding peanuts in with the vegetables.

Girl2Beaver this recipe was great! Very unique taste to it, I went crazy of veggies, I threw in everything I had in the freezer!
