Spicy Black Beans and Rice

This recipe is suitable for a: vegetarian or vegan diet

Category: Main Dishes - Rice




Ingredients:
-----------------------------------------------------

2 tablespoons Olive Oil
1/2 an Onion, chopped
1 or 2 cloves garlic, finely chopped (one if you're unsure)
1 habanero pepper, finely chopped
2 1/2 cups water
1 cup rice (white or brown)
1 teaspoon salt
1 can black beans, drained and rinsed




Ingredients:

Heat oil in a large skillet over medium heat. Add onions, garlic and habanero pepper. Cook, stirring until tender, about five to eight minutes. Stir in water, rice and salt. Bring to a boil, then add the beans. Cover and cook over medium-low heat until rice is tender, about 20 minutes. Remove from heat and let stand for about 10 minutes. Serve topped with a HUGE dollop of salsa and pickled jalapenos!

This sounds good! I'm going to try this one.

I've never made anything with a habanero so I'll probably try it with a jalapeno first.

I bought a jalapeno so I'm going to toss that in there. I plan on making this tonight so I'll be back to post a review! :)

just how hot are habenero peppers?? I'll be looking for your review michael...I loovee bean dishes...but don't want something too hot...I want to try this recipe!

Starblossom, habeneros are the hottest pepper on earth. If memeory serves then they're several thousand times hotter than jalapenos. If you don't like spicy I would go with a more mild pepper.

From what I've heard they're one of the hottest peppers (or the hottest pepper). I'd try a jalapeno first. Or two actually, I added one and didn't really taste it. Someone at work actually made this after I mentioned it and they added cumin, that sounded really good. And tobasco sauce. :lick:

yeah i had meant to post that during the cooking, the heat of the hot pepper diminishes significantly, and since i like spicy food (and eating pickled jalapeno slices) i add the salsa and jalapenos on top. using the jalapeno will ususally only add the taste of the hot pepper to the dish, but using the habanero will add a bit of heat to it. just don't touch your eyes without washing your hands!!!!!! :stinkeye:

Hmm...perhaps I will use half of a habenero pepper instead..heh...this is on my meal plan for next week!

I think I may make this tonight before going to the grocery store. There's very little in the cupboards at the moment, but I think I have all of the ingredients for this!

Just one question, if I happen to have dried habenero/other spicy peppers instead of fresh, would I have to change the recipe at all?

no, you don't have to change the recipe, just sautee the dried chiles in with the olive oil, garlic and onion, and continue with the recipe as written

I made this one last night, and it was great! I did a few things a little different though: I used vegetable stock to sautee the onions, garlic and peppers. I used jalapeno's, instead of the habanero peppers. And I added some mexican spices; cumin, chili powder, cayenne pepper, and chili flakes.

It was a great dish, but I don't think I could have got my fiance' to eat those habaneros!!

I'm in the process of making this right now, and it smells delicioso! My mom (still omni, but very good with working with my diet) commented that it smelled good, and the fact that I can't cook really made that comment even better! Can't wait to taste it!

I just made this with one major variation and it turned out amazing!

I was too lazy to go to the store to buy a pepper, so I skipped the pepper and added 1 tablespoon of asian red chili pepper paste with the water and rice. The paste added a nice color and flavor, and the heat was just right for me. I highly recommend trying this.

This sounds good! Black beans with rice is my main staple food, so this may prove to be a several times a week meal.

As for the heat, I always order my food to be as spicy as the chef can make it, so I may add more than one habanero. I'll probably try it with one first, maybe adding chili powder into the mix as well.

we were out of jalepeno, so instead I used a bunch of spicy red hot sauce, chili powder, and cayenne. I added a dash of cumin too, and it came out beautifully! Definitely a keeper.
