This recipe is suitable for a: vegetarian/vegan diet.
**This was created for baking in one of those round, ring "Bundt" cake pans - if you don't have one, use a 9 X 11 cake pan and less baking time.
Ingredients:

2 1/2 cups grated fresh zuchini
2 very ripe bananas, mashed well
1 cup canola oil
3 cups flour (2 cups of this amount could be pastry flour if you have it)
2 cups sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 tsp. vanilla
1 cups ground walnuts, almonds or pecans (since I hate walnuts but some people love them)
1 cup vegan chocolate chips (the mini-chips are great, but very hard to find...)
Instructions:

In medium sized mixing bowl, combine zuchini, bananas, oil, and vanilla.
Beat with electric mixer. In large bowl, combine all remaining ingredients except chocolate.
Add wet mixture to dry, mix well and add chocolate chips. Pour into well-greased and floured bundt pan.
Bake at 350 for 45-60 minutes, until toothpick or knife inserted comes out clean. Let cool upright 15 minutes, then invert onto cooling rack. Allow to cool 30 minutes before tasting. Enjoy

Good with a lemon glaze, cream cheese frosting or a dusting of powdered sugar (the powdered sugar looks SO pretty for Birthdays or Christmas).
