Chocolate Cheesecake by Sarrim (http://www.veggieboards.com/boards/member.php?u=10013)

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

3 Cups Medium Tofu (I recommend firm tofu for this. When I made it, it came out more like a mousse than a cheesecake, but it still tasted really good.)
1 Cup Margarine, melted
1-1 and 1/2 Cups of dry sweetener (Interesting thing I used. I used basically 3/4 of a Cup of dry sweetener like sucralose, and then 3/4 of a Cup of natural sugar. Came out perfectly.)
3/4 Cup of Cocoa Powder
2 tsp vanilla extract
1/4 tsp salt
1/2 Cup Soy Milk (I used regular, but theoretically one could use chocolate soy milk, for even more chocolate kick.)
1 graham cracker pie crust


Instructions:

Take all the ingredients and blend. Pour into the crust, and cool for 12 hours. It's simple stuff, and quite rewarding.

For the graham cracker pie crust- 1 and 1/2 cups graham cracker crumbs (Be sure to check for honey!)
2-3 tbsp oil
dash of salt.

In a medium bowl, mix together all the ingredients. Press the mixture evenly onto the bottom of a pie plate or cheesecake pan, using fingers and/or spoon.

Unfortunately, I can't remember the size of the pie crust that I used, but just go for a medium one.

Can I substitute cow's milk for soy? I don't buy soy milk for now and I was just curios.

On the other hand, I could use regular skim milk and possibly wind up with chocolate stuff.:D

I've never made this but I would assume so.
