Veggie Pasty

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

Sorry about the shoddy measurements of these ingredients. When I make a recipe from something I've eaten before, I kinda just wing it.
1 small potato (chopped pretty small)
1 regular sized carrot (chopped)
3 or 4 mushrooms (chopped)
Imagine (or any other brand) non-dairy cream of mushroom soup
a little chopped red onion
1 vegan pie crust (can be bought or made)
Cornstarch
Vegan butter/margarine
flour

This recipe made two pastys for me. For those of you who don't know what they are, they're kind of like "Hot Pockets". I haven't quite worked out how to make them all pretty, but they sure do taste good.
Preheat oven to 400 F. Boil potatoes and carrots for about 15 minutes, or until tender. Heat up the cream of mushroom soup. Add a little bit of cornstarch to desired thickness. Add onion and mushrooms. Heat until well mixed.
Drain carrots and potatoes, and add to mushroom soup mixture. Put a bit of flour on your workspace and lay the pie crust down. This will keep the crust from sticking to your workspace. Melt butter/margarine and paint it on the pie crust. Here is the tricky part- not putting so much filling on the pie crust that it bursts through while cooking! I think a couple of large wooden spoonfuls will do. Fold pie crust around the mixture. Try to make it square. Paint the outside with a little butter.
Place pastys on a piece of foil on a baking sheet. Bake for about 10 minutes.

These are SOOOOO good. I just need to work on making them so that I can hold them in my hand without them falling apart...
