Pineapple Thai Rice

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

3 Cups Jasmine Rice (or Your Favourite Rice)
3 Cups Water
4 Green Onions
1 Large Red Chili or Poblano Pepper Seeded
2 Tablespoons Cilantroy
1 Can Pineapple Tidbits in Their Own Juice
1 Tablespoon Olive Oil
1 Teaspoon Minced Garlic
1 1/2 Tablespoon Soy Sauce


Instructions:

Place green onion, chili pepper and cilantro and process to finely chop them. Prepare rice according to package directions. While rice is cooking, mix pineapple tidbits and juice with chopped ingredients in small bowl. Heat olive oil in large skillet on medium heat and add garlic. Saute garlic for 30 seconds or so, then add soy sauce, and pineapple mixture to skillet and heat to a boil. Fold in cooked rice.

This serves around 6 for a side dish or 4 as a main dish. The heat from the peppers with the sweet of the pineapple is totally yummy! :)

I made this tonight and it was delicious!!! This is a definete keeper. :up: I used the poblano pepper and added a little salt and pepper to it and served it with zuchinni and squash that I chopped and sauteed in a little olive oil with onions and garlic and cooked down with a little water until nice and soft. A very tastey dinner for me! Thanks for the recipe!

Ah! I made this tonight too. I left out the cilantro, as it's not a fave of mine. and...I forgot the soy sauce (der). It was a bit spicy for my dinner companion, I think, but definitely a "make again" recipe for me. :)

I made this for tea tonight, it was so nice! I added some fresh ginger because I had some that needed using, and some tofu and red bell pepper to make it more substantial :hungry:. Thanks for the recipe!
