Sauteed Asparagus with Curried Tofu and Tomatoes

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

3/4 lb firm tofu
Salt and black pepper
1 teaspoon sugar
1 teaspoon curry powder
Vegetable oil for frying
4 cloves of garlic, finely chopped
2 teaspoons ground cumin
1 small onion, finely diced
about 12 slender asparagus, toug ends trimmed off and cut diagonally into 3-inch pieces
Several pinces red pepper flakes
4 tomatoes, chopped
3 tablespoons fresh chopped cilantro


Instructions:

Dice the tofu into pieces about the size of sugar cubes. Simmer in 6 cups salted water for 2 minutes. Strain and dry slightly on paper towels. Gently toss tofu with 1/2 tsp salt, sugar, curry powder and black pepper.

Sautee tofu in oil over medium-high heat until it is browned on all sides (about 8 minutes if the pan is really hot). Take tofu out of the pan and kepp on the side.

Add a little more oil to the pan. When hot, ad the garlic, 1 1/2 teaspoons of cumin, and the onion. Cook until the onion is translucent and then raise the heat to high. Add the asparagus, pepper flakes, and a pinch or two of salt. Sautee until the asparagus is tender but not limp. Add the tomatoes and tofu and cook about 1 minute more. Turn off the heat and mix in the cilantro. Serve immediately.

Serves 3 or 4 people

Adjust the amount of curry powder and pepper flakes to your liking. This is about medium hotness, maybe a little less.
