As I still struggle with this, I figured others do, too.

Breakfast has always been the hardest meal for me to keep vegetarian. I don't like cereal, especial oatmeal (:spew:). Cold cereal doesn't fill me up. I was always used to a heavy breakfast - toast, sausage, bacon, eggs, hash browns. I've yet to find a good vegetarian "traditional" breakfast - the eggs, toast, and hashbrowns. Now, I just usually eat sandwiches or some bad days I just skip breakfast until 10am and eat something heavier then.

I still can't get Morningstar products, so I haven't tried their bacon or sausage yet. I don't like Gimmie Lean, Yves, or Boca thus far (I feel like I'm eating chemicals :lol:).

Breakfast is still the most depressing meal of the day for me. Has been so for years, I think it will continue to be depressing...until I can handle eating pizza at 6am :D

Yep - the 'weekend' breakfast - i miss that since cutting out eggs and dairy! Though some vegan sausages are good, with fried mushrooms, fried tomatoes, baked beans and toast does the job (somewhat!) I still haven't tried the 'tofu scramble' thang - tofu is quite expensive 4 euro for a little block - a bit on the expensive side for breakfast!!

Oh! Just realised you might be looking for suggestions for brands - don't think I can help there as I'm in Ireland and we don't have a very good vegan style selection! If you have quorn though, the sausages are very good! (I assume you eat eggs?)

For me it's lunch.This is usually the busiest time of day for me,and I haven't found much that's quick,easy,and yummy.Peanut butter and jelly is only good for so long.

Lunch is easy! Tempeh or tofu sandwiches, phoney baloney, tofurkey, it goes on and on! :-)

I have to agree with FreshTart, breakfast is probably the hardest to come up with (or rather, brunch for my husband). I am a total bread fiend and I am completely content with peanutbutter toast for breakfast and a glass of soymilk (or the occasional bowl of cheerios and soymilk) but my hubbie really loved "brunch". The best i can come up with for a hearty brunch is to make big, belgian waffles covered in fruit and REAL maple syrup, hashbrowns with onions, a nice fruit salad, and some tempeh "bacon" on the side (I make the lightlife tempeh bacon, not a "fake" meat, rather just smoked tempeh. its pretty good and not at all good for you when you cook it as directed, hehe.) Of course this takes a LOT more time to make than bacon and eggs, but its worth it ;-)

Every meal of the week is easy and has never been a problem. I cannot eat enough cereal so breakfast is just a big cereal moment.

The hardest time for me to be veg*n is on special occasions. Like anniversarys or birthdays and I want to go out for a special 'fancy' dinner. Every high end restaurant I have ever found serves sick amounts of the meat - so even if they offer one veggie meal all the veal and lamb they serve totally turns me off to them. :down:

FreshTart - do you like French toast, pancakes, or waffles? Those with a side of scrambled eggs is sure to fill up anybody! Frozen toaster waffles are good if you don't have a lot of time to cook in the morning.

I'm not a big fan of fake meats myself, especially the Morningstar Farms sausage (yuck!). One thing that DOES fool me is some Gimme Lean sausage crumbled up in my scrambled eggs. You could give that one a try. :D

I'm another cereal addict, so breakfasts are easy... I also make a mean tofu scramble with homefries, mushrooms, onions and all sorts of goodies... and it's VERY filling...

I have a tough time with lunches to take to work - I love sandwiches, but I guess I feel like I've tried them all and it's getting routine...

Also, meals when I travel!! I hate looking everywhere for a restaurant that looks like it'll have "something" vegan - and sit down to order and, again, my only choice is a SALAD!!

I totally agree with you on that one! Even the smell is gross.

Breakfast is easy for me-I never ate meat at breafast before..so I have no problems there.

Special occasions is what trips me up (mentioned in a previous post also). It sucks to have to modify and change the main meal to fit my needs.

I've heard some people make scrambled tofu (I haven't but they say it's good). As for something bacon-like, try slicing tofu thinly, sautee in some olive oil .....you can add salt and seasonings and get it a bit crispy. I do this for sandwiches sometimes


I don't find any meals "hard". The hardest thing is not to eat too much hehe

Breakfast.... definately breakfast.

The though of sweets that early in the day.... yuck!

That's why I love eating leftovers for my morning meal. :hungry:

Pizza at 6AM is veeeeery nice. :lick:

I find baked beans are pretty good in place of "breakfast meats" like bacon - they tend to go well with all the other breakfasty stuff. I would probably eat fake bacon occasionally if I could get a decent one, but the only one we have around here is Yves, and it tastes like flavoured rubber. (The Lightlife temeph bacon sounds really good...) And let's not even talk about tofu scrambles; my experiences with tofu thus far have made me afraid to try anything like that. :p

A weekender breakfast for me is a big veggie scramble (no tofu), fried potatoes, slices of tomato, avocado slivers, sliced melon (if we have it) and either WW toast with preserves or cooked corn tortillas.

Sometimes if I have beans made I'll put a bowl of beans with it, too.

Serious weekend yum! :drool:

Beans just don't cut it. I can't eat a very many without serious vomitting, so a small scope just doesn't do it for me.

I have tried to like french toast and pancakes. I had too many traumatic experiences with them while working at a restaurant in university that I can't seem to move past the trauma. :no: I continue to try, however, and hope that therapy will help me.

I did that in university. Now that I am old and senile, it just doesn't work anymore :( The heartburn alone.... :-/

And I love Cheese Whiz, but now that's giving me digestive issues, too, so that's another food scratched off the list. :cry: Cheese Whiz :cry:

Snacks... I always want something fatning and high in animal junk... cake, cookies and all of that. I can still make most of it at home, of course, but it's not as easy and dosn't tast as junky, probally because it's healthier when i make it at home. :hungry:

I know it's nothing like cheeze whiz (is there *anything* like cheeze whiz?) but... have you tried making nutritional yeast sauce to replace the whiz?

or... maybe a pizza of just veggies, a good tomato sauce and no cheese?

there's *gotta* be a way that you can have 6AM pizza without having problems by 6:01....

I am afraid I can't help. I have eaten the same thing for breakfast every day for the past year and a half (high fibre crisp cereal with rice milk) and before that, I had the same thing every day for seven years (dry honeycomb cereal). :lol:

Can we be honest with each other? I hate nutritional yeast :lol: I cook with it on occasion, but generally, I hate the stuff.

I can eat a Pizza Hut light cheese mushroom pizza at 6am. Only Pizza Hut though. Now...if only I can make this at home (as the Pizza Hut budget is a bit tight....) I don't know WHY Pizza Hut and not my homemade or other places...or even frozen. Just Pizza Hut. And I swear I do'nt put Cheese Whiz on my homemade pizza. Honest! :lol:

ok, so maybe 'Za Hut is doing something you're not (duh, obvious... I know). Is their cheese a light cheese parchance? Maybe you can find out who their supplier is and see if that same company sells to retail markets? Long shot, I know but it might be worth the try.

What about bagels? Take a bagel, cut it in two, add tomato sauce, mushrooms, peppers, whatever veggies you can handle and a little bit of cheese if you want that (even just parmessan cheese), put it in the oven/broiler for about 5 minutes, take out and enjoy.

Or take a tortilla wrap, spread hummus or guac or just avocado, then add any filling you like. Or you can make a pizza wrap with it.

I love tofu scramble.

Good morning!

I don't have trouble with breakfast myself, I usually have cereal or toast.

But what about soup? It's a crazy idea, but I have heard that some elite athletes eat soup for brekkie and also I think that in some cultures it is not uncommon to eat soup for breakfast. It can be something a little more mild, not talking 3 alarm chili here. You could keep a big pot in the fridge or dish up and freeze individual portions, heat it up in the microwave. Quick.

There are always muffins - quick easy to go food. Or, something like a rice pudding, (not overly sweetened) with lots of dried fruit or maybe a blended smoothie?

Just a couple of ideas...

I find lunch to be hard because I generally hate sandwiches and I only have about 25 minutes on a workday so it needs to be something quick. I eat a lot of frozen pasta.
