Do you like croissants? You could make an egg breakfast sandwich using croissants...

You don't like oatmeal, but do you like cream of wheat?

Wow, I'm lucky, I love pretty much ALL breakfast foods and I don't have digestive issues. I'm feeling for ya right now!

Hardest meal is the food I bring to work with me. It's hard just to figure out what I'm going to bring.

Do you have a microwave? My husband pretty much relies on leftovers from dinner the night before. That's a foolproof one. If there aren't any leftovers, it's either a sandwich, a salad, or hummus and pita bread (yummmm....) :D

I moved in with my parents for the summer. *rolls eyes* and my father is a big fat jerk who eats all the leftovers every night. Sandwhich and salads get old. Pita bread sounds good.

Well, your breakfast problems seem to be caused more by dietary restrictions, than vegetarianism. I can certainly sympathise, because that's what makes breakfast MY hardest meal. Every morning it's basically a choice - eat a healthy breakfast (fruit, etc.) and stay in all day (due to my bladder disease), or eat crap (fried potatoes, pancakes, or similar) and be well enough to go out. I don't like most of the vegan boxed cereals, so I guess pickiness is part of it, too. :p It's especially hard lately because I want to improve my diet so badly, but so many healthy foods just kill me. :( On the other hand, I know my body is going to have a much harder time healing if my diet is so poor. I can't win!

Anyhow, good luck with breakfast. Potatoes and brown rice have gotten me through many a tough time, but when I get better I don't think I want to even look at a potato again. :D

Krista: I love avocado sandwiches. Basically it consists of avocado, tomato, thinly sliced red onion, cucumber, salt and pepper (and sometimes margarine or eggless mayo) bewteen two slices of ww bread. It's delicious even without tomatoes and onion, so it's no problem if you can't have that. :)

here's a good vegetarian breakfast (not vegan):

1. frittata: eggs, various veggies (say, asparagus and peppers). i like to lightly sautee the asparagus tips and the peppers in a bake-able frying pan until they're al dente. Then, add some scrambled eggs to the pan. as the edges begin to curl, you can take the eggs off the heat, and then bake or broil them for a few more minutes (the whole process from sautee to finish broil takes about 15 minutes). During this time, i tend to prep my hash browns and my fruit. Sometimes, i have fruit with yogurt and with granola.

So, it's eggs with veggies, yogurt parfait, and hash browns. I find it very filling.

If you're not keen on eggs, i recommend tofu scramble with veggies, granola or mixed natural cereals with soy milk or the like, and hash browns.

i havent started vegtarianism diet YET. but i will probably live on fruit for breakfast and cereal. otherwise im dead

Mmmm...I forgot about yogurt with granola. That's one of my all-time favorite breakfasts or after-dinner snacks. :lick:

Well, as long as you can still have potatoes. Phew. There's sooo much you can do with those for breakfast or any meal:

Baked potato w/ fixins
mini red russett potatoes (fried in oil or baked)
mashed potatoes w/ a veg. gravy
scalloped potatoes
potato latkes
fried potato pancakes
veg/potato stew...

The list goes on and on. :) Also, do you like oat bran or any other hot cereal, by any chance? They're all good to me. For the longest time I completely LOATHED oatmeal as well. But since I turned veg, I LOVE the stuff. Weird, but very good and convenient. :yes:

since my kids have left to their dad's....I am not sure what meals are. I eat here and there, but it is hopeless. I hate cooking for 1 person.

That's a really good point.

When I cook for us all, I make great and healthy meals. But I am hopeless at cooking for 1.

I LOVE making vegan breakfast! The only problem I have is when I am going out somewhere. I have been very tempted to order a stack of blueberry pancakes at IHOP.

Krista, why don't you make yourself some healthy veg*n pancakes (like buckwheat, whole wheat, unbleached white, or bran) and put on lots of fresh fruits like blueberrys, cherries, strawberries, and bananas inside the batter and as a topping. Then top it with whipped cream or a dollop of ice cream (you aren't vegan, right? If you are, just whip up some tofu whipped cream or put some soy delicious :drool:), then pour on the maple syrup. The natural kind is best. :lick: Maybe add some granola to it.

You could make scrambled tofu, although I've never had it. Fresh fruit smoothies are great for the morning, too. And if you don't like oatmeal, they have other hot cereals to take it's place like multi-grain, flax, cream of rice, cream of wheat, etc. One of my favorite things to do is turn a traditionally "cold" cereal into a hot cereal.

Oh, the possibilities... :D If you are having heartburn troubles, maybe just eat a non-spicy, light lunch for breakfast instead of breakfast foods?

So many of those things I can't eat :cry: Still, ice cream for breakfast sounds very tempting..... :drool: You know, I like anyone that suggestions ice cream in the morning. +.5 points for you :up:

I'm going back on my depressing allergy diet as of tomorrow. /sigh I can't take it anymore.

Alcohol gives me heartburn. :D I feel for you. Do you take any medicine for the heartburn? Also, dairy is a major contributor to allergies (at least it was for me, but I was lactose intolerant when I was a kid). Perhaps cutting that out would help?

Only in tiny amounts. All grains cause the projectile vomitting I mentioned earlier.

Tempeh...I gotta be honest, I'm terrified of the stuff. I had it once and got wicked, and I mean wicked, gas, but I don't think it was the tempeh (I think it was the peanut sauce on top of it :lol:), but now I have tempeh trauma. Not as bad as the oyster trauma when I was 18, but close. :no:

Dairy never made a difference digestively. I haven't for certain decided if it causes my sinus allergies, as I am allergic to dogs, cats, people, and air :)

The perfect breakfast, in my opinion, is a yogurt parfait.

Main ingredient:
yogurt (soy yogurt works too)

Optional ingrediants:
fresh fruit, dried fruit, freeze dried fruit, preserves/jam, nut butters, chocolate/candy, granola, nuts, syrup, honey, crackers, cookie crumbles, etc

Combine in a bowl and stir. Refridgerate overnight. It's a very nice consistency and easy on the stomach. It tastes great and fills you up. The calories vary...I've made it as low as 200 calories and as high as 1000. It all depends on how of the optional items you add and what type of yogurt you use. You can make this very healthy..or pure junk food, if you wish to do so. Depending on the yogurt/option items you choose, this can even have basically no sugar.

The hardest meal for me is breakfast too, heh. I sleep through it. So I tend to have the yogurt parfait for lunch. :yes:

Breakfast is still the most depressing meal of the day for me. Has been so for years, I think it will continue to be depressing...until I can handle eating pizza at 6am :D

That's the key, really. I have pizza for breakfast nearly every morning. Best meal of the day.

But actually I love breakfast foods. Morningstar's bacon is always stocked, and hashbrowns or american fries, waffles, toast, orange juice... all of that is a common dinner meal for me.

I've only read the first page of this thread (lazy, I know) so I'm sure this might have been mentioned...

But what about bagels for breakfast? Or pita pockets with tofu salad (made the night before)?

For me it's not a matter of just what to eat, but what I'll let myself eat b/c I can rack up the calories EASILY first thing in the morning without even trying... :worried:

...all it takes is one vegan muffin from Wild Oats ;)

morningstar products are so-so. i don't use them often. maybe occassionally the veggie crumbles will be used for a meal shared with omnis. other than that. no biggie. not missing much.

The faux sausages are much better drowned in syurp. You can also make a faux sausage Mc Muffin with english muffin, sausage, egg, and or cheese. I add the syrup and it tastes like those new ones they have with the pancake instead of the muffin. What are those things called? I rarely eat at Mc D's. lol
