Vggiegirls Udon, Plum Veggies, and Baked Tofu

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

2oz Udon Noodles
1/2pkg baked tofu. Any flavor will do
1/2c frozen peas
1c frozen broccoli
1c frozen green and yellow bean medley (from trader joes )
Chili oil
Ume Plum vinegar (Eden makes it. Avail @ whole foods)
--or-- rice vinegar
Rooster hot sauce
1/2c water or veg. broth
Fresh garden chives
Fresh garden basil
Instructions:

Heat chili oil in wok and add baked tofu. Sautee on medium, stirring occasionaly until brown. Cover. In the meantime boil the 2oz udon noodles in 6c water for about 5 minutes. Drain and rinse.
After sauteeing tofu, add frozen veggies and cover. When veggies begin to thaw and broccoli is bright green add a few dashes of the plum vinegar and rooster sauce, then add noodles and 1/2c water or broth. Stir well and cook until liquid is disolved.
Garnish with fresh chives and basil ribbons. (If you prefer, you can always thrown the basil and chives in the mixture and cook them as well.)
