Rev's Favourite Peas and Pasta

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

Olive Oil
1 Large Sweet Onion Diced
2 Tablespoons Minced Garlic
2 Tablespoons Bac*os
1 16 oz. can of Sweet Peas - Drained
Pinch of Parsley
8 oz. of Small Shaped Pasta
Water
Salt


Instructions:

Start 2 quarts of water boiling for your pasta. Add about 1/4 cup salt to pasta water. When boiling, add pasta and cook for about 7 minutes.

While water is boiling, add enough Olive Oil to cover the bottom of your pan about 1/2 inch. Add in your onion, garlic, parsley, Sweet Peas and Bac*os. Saute all ingredients in Olive oil, stirring occasionally. When onions are soft and translucent, and peas are somewhat mushy, add in cooked pasta and stir ingredients together to coat.

Garnish with more parsley, Bac*os and green onions if you desire. Serve while hot.

Makes about 4 servings if you are using it for a Main Dish or about 8 servings if you use it as a Side Dish.

I like to use various small shaped pastas together, as it makes it look nice and have different textures. This reheats well in a microwave too.

I just made this for dinner and it was as yummy as I thought it would be :lick: , even though I don't condone the use of Bac*os or other imitation bacon bits (too artificial). My mom tried some and she liked it, too. I used frozen peas instead of the canned ones and I also added a little sea salt and ground black pepper.
