Akasha's Chocolate Chip Cookies

This recipe is suitable for a: vegetarian diet.

Ingredients:

Ingredients:
1 cup unsalted butter or organic shortening
1/2 cup brown sugar
1/2 cup sugar
1/4 cup Vanilla Silk Soy Milk
1 teaspoon vanilla
2 & a 1/4 cups unbleached flour
1/2 teaspoon salt
1 teaspoon baking soda
12 ounces semisweet chocolate chips


Instructions:

Instructions:
1. Preheat the oven to 350°F.

2. Cream butter and sugars until light and fluffy. Slowly add Silk, cream well, then add vanilla. Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chips.

2. Drop by teaspoons on parchment lined cookie sheets. Bake at 350°F degrees for 8-10 minutes. Serve with ice-cold glasses of Silk.

Preparation Time: 25 minutes
Cooking Time: 10 minutes

i just made these today, and i think they could do with just 2 cups flour, otherwise they are delicious!

I just made these today, using Earth Balance instead of butter to veganize the recipe.

They are the softest cookies I have EVER eaten! They are so delicious, and after trying different recipes, that I am officially making this my #1 chocolate chip cookie recipe. :hamster:

Another plus: they aren't too sweet. Even you don't have a strong sweet tooth, I'd leave the sugar measurements as they are.

I'm going to try these, using either vegetable shortening or Earth Balance to "veganize" them as Janie said. :p

I hope they turn out well, I'm craving some cookies. :)

Yes I did, they were awesome! A big hit with my omni family too.

A direct quote from my father, "Alli, I think you need to make us more vegan chocolate chip cookies."

It's a really easy recipe too. I'm actually making a second batch now, lol.

Oh man! These were delicious! I am a baking expert and Ive never made cookies or anything else baked without eggs! I used Rice Dream Vanilla (didnt have soy) and real butter and the were so scrummy! Thanks for sharing! :)

These are amazing. I used vegan earth balance margarine instead of the butter, and I didn't have vanilla Silk, so I just used plain but added a bit more vanilla to the recipe. These cookies are the best ones I have ever made, and I've made a lot of cookies! Thank you so much for posting it!

You do know these are just copied off the Silk container, right? I thought they turned out awful, dry, crumbly and way too "vanilla-y".

I actually didn't like these much, mostly because I'm used to cookies that taste homemade. If you're familiar with the "little bites" brand (I think that that's what it's called-- little tiny cookies that come in a bag) that's what these taste like-- rather premade and mass produced. They even look like them! Certainly not Nestle, but if you want a change, these are good for that.
