Pineapple Pudding
By: I think this is my grandmother\'s recipe

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1/2 C. butter
4 eggs
5 slices bread - cubed
1 C. sugar
1 can crushed pineapple - 16 oz. (drained). Use the kind in its own juice - not in syrup.
Instructions:

Cream together the butter and sugar, beat in eggs one at a time. stir in pineapple, FOLD IN bread, turn into 1 1/4 qt. greased casserole dish. Bake at 350 degrees uncovered for 50-60 minutes.
For more than 3 people, you'll probably want to double the recipe.

Ofcourse you can switch out the ingredients for veg*n products. I haven't made this in a long time, so I haven't had a chance to make it using an egg substitute.
This recipe you can kind of play around with a bit. Some people like less butter and less sugar, etc.
