Summer Pasta Salad

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 lb. of whole wheat penne
1 large can of artichoke hearts - drained and diced
2 cups diced tomatoes
1 can of cannelini beans - drained well
1 cup italian dressing of your choice (more or less to taste)


Instructions:
-----------------------------------------------------
Cook penne according to package directions. Drain and rinse.

Toss together cooked penne, artichoke hearts, tomatoes, beans, and italian dressing. Taste it! It might need more or less dressing.

This makes a great summer dinner that only takes about 20 minutes to get on the table. If you have some fresh basil, mince up a few leaves and add that.

I thought that would be after it's cooked. I even asked the guys at work and they thought it was funny that it was worded that way. I'll probably make it tomorrow.

I got a can that's about 12 oz and I'd say that's sufficient. Made it this morning, it's not too bad. Some of it will probably go to waste, made way more than I can eat. :-/

I probably won't see anyone until tomorrow night. I could take it to work. I'm not sure how long it'll keep.

It does make a big batch. I use a 12 or 14 ounce can of artichokes. We serve it for dinner with fruit and a nice crusty bread and then we have enough leftovers the next day for lunch for me & the boys and my husband takes for lunch.

You could probably quarter the recipe, but the artichoke & beans would kind of be "leftovers".

I took the rest to my mom and sister, they loved it. There was a lot left and I told them it would only be good for another day or so, my sister said "It'll be gone by tomorrow." :lol:
