Breakfast Coffeecake

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 cup white flour
2/3 cup sugar
3/4 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt

1/3 cup plain yogurt or sour cream (or vegan substitute)
1/3 cup orange juice or soymilk
3 Tbsp plain veg oil (canola, corn, etc)
2 tsp orange zest (optional)
1 tsp vanilla extract

Streusel Topping:
2/3 cup white flour
1/3 cup finely-chopped almonds, walnuts, or pecans
1/3 cup shredded or dessicated coconut
2/3 cup white or brown sugar (or a combo of both)
5 Tbsp melted butter
1 tsp cinnamon
1/4 tsp salt


Instructions:

Preheat oven to 350F (175C)
Grease an 8"x2" round (or comparable-sized) pan

Combine the first 6 ingredients in a large bowl & set aside

Mix the wet ingredients in a medium bowl until well-blended. Add to the dry mixture in the large bowl until just mixed -- do not over-stir.

Scrape the batter into the greased pan.

Sprinkle with half the streusel topping. (eat the rest, hahaha)

Bake until an inserted toothpick comes out clean, about 30 minutes. Let cool before serving. Best if made the night before.

this turned out SO yummy. I forgot to indicate that it's about 4 large or 6 medium servings. DH and I ate almost the whole thing this morning. :o

Oh, and I opted to leave out any of the orange stuff -- I used soymilk instead of orange juice and omitted the orange peel. I think I actually like it without the orange.

I made this for breakfast today and geez, I stuck my finger in the batter once and I litterally couldn't contain myself from eating the batter. The coffee cake itself turned out awesome too. Yum, definetly going into my "tried & true" recipe book.

I made this over the weekend. It was really yummy - and I made it all vegan! The only problem is that the cake part was really mushy - but I fear that might be my oven. I need to get some toothpicks to test things first and not be so excited to get them out of the oven...
