Vegan Almond French Toast

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 cup vanilla almond milk
2/3 cup mashed plain firm tofu (about ¼ of a pound)
2TB smooth roasted almond butter
1/4 tsp almond extract
1/4 tsp cinnamon
12 slices bread (whole grain or white, as desired)
6 TB lightly toasted sliced almonds
sprinkling of powdered sugar for garnish


Instructions:

Preheat oven to 200°F. Place a large dinner plate in the warmed oven. Combine the almond milk, tofu, almond butter, almond extract and cinnamon in a blender. Puree until completely smooth. Pour into a wide shallow dish. Heat a non-stick skillet that has been lightly sprayed or oiled over medium high heat. Dip each piece of bread, one by one, into the almond milk mixture. Drain excess almond milk mixture before placing on hot skillet. Cook French toast until just browned on the bottom (a couple of minutes), turn, and brown the other side. Adjust heat to medium, if necessary. It browns best when using a non-stick cooking surface.

Didn't have the almond extract but I used a couple drops of vanilla. This makes YUMMY french toast!!!

Would it still turn out alright if I substituted soymilk for the almond milk? (it's WAY expensive over here:( I miss Almond Breeze hehe)

Also, I'm glad you included cinnamon in your recipe:D
I remember having french toast without any cinnamon at the 'pulp kitchen'...it just doesn't taste as good as with.

I have used soymilk, ricemilk and once I even (*gasp*) used cow's milk... it all turns out fine - I think the almond milk just emphasizes the "almond" flavor, though with the almond extract I think it tastes plenty "almond" enough...

Mmmm.. those pancakes are good too, probably a bit simpler than the french toast, but they're both yummy. Let us know how you like whatever you end up making.

This sounds really good! I was just thinking about breakfast foods on the way home and how I will miss french toast and how do you veganize it, so perfect timing! :)

If you're not an "almond" fan, use soymilk and skip the almond extract... there you have it - plain ol' regular French Toast... definitely good when you're missing those "traditional' Omni breakfasts...
