Asian Sesame Cucumber Salad

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:
-----------------------------------------------------
2 cucumbers, cut lengthwise, seeded, and sliced into thin half moons (about 2 cups)
1t salt
1T sugar
1T soy sauce
1/4C rice vinegar
1t sesame oil
2t sesame seeds


Instructions:
-----------------------------------------------------
In a large bowl, combine first 6 ingredients. Sprinkle with sesame seeds; toss well to coat. Cover and chill for 20 minutes before serving.

Make 4 servings (or two if you are a salad fanatic like me).

Made it this morning, not bad at all. Quick and easy. The only thing I'd do differently next time is cut the cucumbers in quarters rather than halves, just to make it easier to eat. Will probably also add some onion.

The only problem I have is getting the liquid to really soak in, it tends to settle in the bottom. :-/ Also, Jinga says she uses brown sugar in place of the regular sugar but I wasn't sure if it's the same amount so I haven't tried that yet. I don't seed the cucumber either and I only cut it in halves.

i would use the same amount of brown sugar b/c brown sugar is just regular sugal with molases (if i'm not mistaking ... but i could be wrong)

My brother-in-law is Japanese and the secret to this salad is peeling the cucumbers, lightly salting them (this draws out part of the liquid), allowing them to "rest" for about 5 to 10 minutes, rinsing them with water, and and letting them "dry" for about 15 more minutes before adding the liquid. The cucumbers will them soak up more of the dressing. It is best to use English or European style cucumbers for this recipe
