Pseudo Cajun White Bean Soup

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

Celery
Green bell pepper
Onion
Garlic
White beans in tomato sauce
Stock
Flour
Vegetable oil
Bay leaf
Thyme
Oregano
Dried basil
Salt
Paprika
Ground black pepper
Cayenne


Instructions:

First, you make a roux (though chopping the vegetables and starting the stock beforehand isn't a bad idea). This is done by gently mixing half a cup of oil and three-quarters of a cup of flour in a pot (the one you're making the soup in) and stirring it constantly over medium-high heat. If it starts to show dark specks, it's wasted.

When the roux starts to smell nutty, throw in the onion, bell peppers, celery and garlic. Stir for a minute or two (over medium-low heat). Then, gently stir in some of the stock in the mixture. Add the beans, stir, add enough stock to create the desired consistency, stir again. Add the spices (to taste). Let the soup simmer for a while (the longer, the better). Remove the bay leaf before serving.

I deliberately didn't include exact measurements (it's a matter of taste). The roux measurement is just a guideline, it should be adapted when required.
