Chocolate Cookie Pie

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

One cookie pie crust
About 2 cups chocolate "ice cream", softened
1 1/2 batch chocolate chip cookie dough (I usually use the back of the chocolate chip bag, switching the non-vegan things to vegan things.)
Any dairy-free cool whip type stuff
optional: chocolate chips, chocolate sauce, peanut chips...
Instructions:

1. make cookie dough
2. bake 1/3 batch of cookies
3. while cookies are baking, spread the remainder of the dough on the bottom of the pie crust.
4. spread the chocolate "ice cream" on top of the cookie dough
5. take cookies out of oven if done (just putting this to remind you that there in there!)
6. freeze pie until serving
7. before serving, spread the "cool whip" all over the pie in big, fluffy mounds.
8. put the cookies and optional stuff on top of the cool whip.

I made this when I was eleven with my little sister, and since then she has been begging for it, so I altered the recipe to be vegan. She couldn't tell the difference!
nutritional info: ummm, yeah, it might just be good if I leave this part out, huh? (I guess you could make this healthier with a chocolate sorbet, altering the cookie dough recipe and using low-fat crust and "cool whip")
note: you can make this a Reeses pie by subsituting the chocolate chip cookie dough with peanut butter cookie dough, and spreading a thin layer of creamy peanut butter inbetween the chocolate "ice cream" and dough. Top with (on top of cool whip) cookies, peanut butter chips and/or peanuts.
Or (this is what my little sister likes to do) you can use sugar cookie dough, spread frosting between the cookie dough and use vanilla ice cream. Top with (on top of cool whip) sprinkles and the cookies.
