Hail Seitan! Szechuan Stirfry

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 crown of broccoli
20 or so green beans
1 bushel baby carrots
1 can baby corn
10 big white mushrooms
10 pieces seitan [can sub x-firm tofu but the name is not as good ;) If using tofu, marinade with soy and chili-garlic sauce and a little lemon juice]
½ a white onion
3 cloves garlic
2 inch knob of ginger
½ teaspoon sesame oil
1 tablespoon sesame seeds
½ teaspoon chili garlic sauce
1 tablespoon soy sauce
3 tablespoons golden dragon spicy Szechuan sauce
2 tablespoons peanut oil
1 splash mirin
Instructions:

Prep:
Chop up everything in advance and have bottles of seasonings on hand, once the pan is hot the cooking goes quite fast. Chop the broccoli into nice big chunks, leave the beans whole but chop off the tops and bottoms. Slice the carrots into long thin strips, a bit bigger than julienne but the same idea. Chop the mushrooms into slices, open and drain the can of baby corns. Cut the onion half into quarters, leaving good sized chunks. Peel and chop the ginger into slivers, and finely dice the garlic.
Cooking:
Get the pan hot hot hot! In one hand have your peanut oil and in the other your mushrooms. Splash in a good layer of oil and follow immediately with the mushrooms. Add the chili garlic sauce and a bit of soy sauce, then get stirring. Let these brown a bit, then add the seitan, onions, garlic and ginger. Let this mix fry for a bit, until the onions start looking transparent. Deglaze the bottom of your pan with some mirin, then throw in broccoli, beans, carrots, and baby corn. Top this off with the Szechuan sauce and some soy sauce. Stir it and fry it a bit, until the carrots start softening, then add sesame seeds and sesame oil to finish. Give it all one final stir then take it off the heat. You can serve it on top of rice, rice vermicelli noodles, or just in a big bowl with chopsticks.

Other options:
Some items you can add or substitute are canned bamboo chutes, bean sprouts, snow peas, bok choi, celery, bell peppers, cauliflower, gai lan, can of sliced water chestnuts, perhaps even chopped peanuts or cashews. Things like nuts go in near the start so they brown; firmer veggies go in with the carrots etc, and leafy ones like bok choi go in near the end.
