7 Spice Pilaf
By: Modified from a friend's recipe...
Category: Main Dishes - Rice
This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1/3 cup chopped onions
1 tablespoon olive oil
1 cup long grain rice
1/2 teaspoon ground cardamom
1/2 teaspoon paprika
1/4 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1 (14.5 ounces) can vegetable broth
1/4 cup water
1 cup chopped fresh spinach
1/4 cup golden raisins
1/4 cup sliced almonds
Instructions:

Add oil to a medium saucepan and allow to heat.
Add in onion; stir/saute until tender.
Add in uncooked rice, and the next 7 ingredients.
Cook and stir over medium heat for 5 minutes or until the rice is golden.
Add in the vegetable broth and water.
Bring to a boil; lower the heat, cover and simmer for 15 minutes.
Remove pan from heat and let stand, covered, for 5 minutes or until liquid is absorbed.
Stir in chopped spinach, raisins, and almonds; adjust seasoning to taste--salt/pepper, etc --

I bring this to a lot of potlucks and dinners where I might not have something to eat otherwise - the spices are unique but it's always a hit with everyone...

Also I was wondering if this dish is Lebanese in origin? They often use a mixture of spices called seven spice in their cooking.

Umm.. I have a question. What is vegetable broth? I don't think I can buy it here (I'm in Malaysia).

Linda- Sorry you can't find vegetable broth. I found a few brands at a local health food store but I'm not sure if there are health food stores in Malaysia? Anyway if anyone knows how to make homemade veggie broth it would be interesting to know how.

Hi there, yep we have health food stores here (like Nature's Farm for example) but I'm not sure if they sell vegetable broth. I've been in one and saw they have stuff like body building supplements, brewers yeast, and some other dried goods.
I'd like to know, this vegetable broth, what does it look like? Is it in a can, or is it some sorta powder where you have to mix it with water?

Comes as a powder - or you could use veggie stock cubes I would guess...

Ah, thanks for the link. We do have Marigold products sold locally, I'm just not sure if they have this particular powder here but I'll try to find it.

just wondering if you could use jasmine rice...or if the flavor would clash with the spices. i ask, because all i have is jasmine rice right now, and that looks good... :/
I made this tonight for a party of five. It was a resounding success—everybody commented on it. Definitely a keeper.

I am going to have to try this. Can this be made in a rice cooker? Can I use veggie boulion fro the broth?

So, I made this with the jasmine rice and it was very good. I varied the recipe just a bit. I don't care for onions, so substituted onion powder. I then chopped some fresh broccoli and tossed it with the rice - very tasty.
It was good the first night, but I made enough for left-overs. Today, I had it again for lunch and it was a lot better the second time around. I think this is the case, because I cooked it with the raisins in the mix while re-heating it.

I tweaked it a little too. Ground cardamom was $14 a bottle at the grocery store, so I just used some fresh black cardamom pods that I had in my Indian spice box. I also left out the raisins because I didn’t want to buy a two-pound box just to get a quarter cup. I also used slivered almonds instead of sliced because that’s all I had lying around.
I’m thinking that you could potentially make a complete meal out of this dish by adding some legumes (perhaps lentils) and adding more spinach. It would make a nice, complete one-pot quick meal which you could serve with warm bread. Very easy, and practically no clean-up.

I don't know if you can use bouillon or not...part of the purpose of the broth is to soak into the rice. i guess you could use more water, and the bouillon for taste.

You can always put a bouillion cube in a glass container with water and microwave it, stirring every 30 seconds until dissolved. Or put it on the stovetop & cook until dissolved. Just make sure that you replace any water that evaporated.
