Zucchini and Berries Cookie-Bars

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1/2 C. Earth Balance buttery sticks (1 stick)
1/2 C. Turbinado, ground into a powder or dissolved in minimal liquid
1/2 C. Brown Sugar
2 Ener-G egg-replacers (or equivlant replacement for 2 eggs)
1/3 C. soymilk
1 tsp. Vanilla Extract
1 1/2 C. Unbleached A/P Flour
1/2 C. Whole Wheat Flour
1/2 tsp. salt
1 C. dried berries (cherries, cranberries, blueberries, strawberries, etc.)
2 C. grated zucchini
1/2 C. chocolate chips (optional)
1/2 C. chopped walnuts (optional)
3/4 C. dried/flaked coconut (optional)
1/4 C. flax seeds (optional)
1 1/2 tsp. baking powder
Instructions:

1.) Preheat oven to 350* F; grease a 9"x13" baking pan.
2.) Cream E/B and sugars together; mix in egg replacements, vanilla, and soymilk.
3.) Mix flours, salt, and baking powder together in separate bowl.
4.) Stir dry mixture into creamed mixture; stir in fruits, zucchini, other mix-in's (choc. chips/nuts/etc.).
5.) Spread the batter evenly in the greased baking pan; bake for 35-40 minutes, or until top is light-golden brown and a toothpick or knife inserted in center comes out clean.

I altered this recipe last night with great success. The finished product is more like a blondie than a cookie bar I guess, but it's still really tasty.
I forgot to add the coconut into mine; I also wish I had throw some flax seeds in there as well. I can see the recipe being good with a little cinnamon mixed in. I only used 1.5 C. zucchini (all I had), but I wouldn't mind having more mixed in the batter. This might throw off the consistency and the soymilk may not be necessary, but I've come to find that using the Ener-G replaces reduces the moisture (from 2 regular eggs), so one must compensate. Bah. I digress...
