View Full Version : Blue Corn Muffins w/ Flax & Currants

1.5 cups blue corn meal
1/2 cup wheat flour
1 tsp baking powder
2 tsp baking soda
3/4 cup sucanat
---> sift dry ingredients, then add:
1 cup vanilla soy yogurt
1/4 cup soymilk
1.5 tsp vanilla
2 TBSP safflower (or other light) oil
1/4 cup flax seeds (whole)
1/2 - 3/4 cup currants

Bake at 350 for about twenty five minutes, until they're set. You know when they're done, don't you?
