Heavenly Vegan Cheesecake

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

Crust:
2 c. granola of choice
4 Tbsp. Earth Balance margarine
2 Tbsp. light brown sugar
1 tsp. ground cinnamon
Filling:
8 oz. Tofutti Sour Supreme
16 oz. Tofutti cream cheese
1 c. light brown sugar
2 Tbsp. whole wheat flour
2 Tbsp. lemon juice
2 tsp. vanilla extract
1 tsp.salt
Instructions:

Preaheat oven to 325 degrees. Grind granola in a blender to the consistency of coarse flour. Transfer granola to a mixing bowl and add cinnamon and sugar, make sure to mix the ingredients well. Melt margarine and add to the granola mixture and mix well. Press mixture into a 9" springform pan or deep dish pie pan.
With an electric mixer, blend all the filling ingredients until smooth. Pour into crust and bake for 25 minutes until just golden brown. Let cool and chill for 3 hours before serving.

This is actually an altered recipe from a vegan cook book called Native Foods. I L-O-V-E cheesecake....I'm a snob about cheesecake, and this cheesecake tastes just as good as it's dairy counterpart. Serve it with fresh berries for an extra special treat.
