View Full Version : Wild Forest Rice

1.5 cups dry wild rice, cooked according to directions (I guess three cups water or so and a dab of margarine, for 50 minutes)

- set aside.

Then prepare:
1 bunch kale, shredded
2 large ****ake mushrooms, cut into slices

In a wok or skillet, heat up a little safflower oil, and throw in the veggies. Add 1/4 cup soy sauce, and 1/4 cup water. Let it all start cooking down, stirring occasionally. Mix in: 1 tsp hot sauce, 1 tsp cinnamon, a pinch of nutmeg, and a pinch of ginger. When the kale is completely wilted and the mushrooms soft, remove from heat. Sprinkle over a small handful of raw sugar. Then combine with the cooked rice.

I'm going to serve this with roasted potatoes, and fried tempeh.

Oh yea, it comes out looking all foresty... with the color scheme. And it's yummy. :)

Yum! I made this the other day and served it with fried tofu, it was so healthy and good! I was wondering if I could have your permission to post the recipe on my blog?

CharityAJO hasn't logged in in over a year, so if you want a response from her you could try emailing her or something. On the other hand, I'm sure she doesn't mind you posting the recipe as long as you state who and where you got it from.
