I love HIAV and a few others

but i'm looking for healthier alternatives that include lots of nice green veggies (kale, broccoli etc)

basically cookbooks that try to include the most nutritious recipes

This is an updated version of a book that I own, Recipes from an Ecological Kitchen. The recipes focus on whole grains, beans and vegetables and are pretty low in fat. They're also really delicious. She includes pressure cooker and conventional instructions for most of the recipes.

I got this book because other VBers recommended it: The Mediterranean Vegan Kitchen, by Donna Klein is really vegetable-focused (as opposed to soy or carbs or whatever). I've only made maybe half a dozen recipies from it so far, but they were all really good, I'm really pleased with the book. I try to eat mostly local and I'm in Canada, so a Mediterranean book will probably be more useful in the summer.

I really like "The Garden of Vegan." Also, "The Passionate Vegetarian" has a TON of very good vegetable recipes. It's ovo-lacto, but the author includes notes on how to veganify dishes if possible.

The Passionate vegetarian has recipes for greens (different types, including kale) and for brocolli. It's far and away my favorite cookbook.
