View Full Version : Dr. Oetker's organic mixes

Today I used the Apple Cinnamon muffin mix as a base. I followed the directions, sans oil (subbed applesauce), and added chopped apples, walnuts, raisins, and golden flax seeds.

I'm at high altitude, but the box doesn't mention any special directions for said situation, so I just followed as stated. The muffins, while good, came out chewy. I love muffins so I don't really care too much about that.

In the past, twice, I've made the chocolate cake mix...and this could be due to a number of things, but the cake has turned out dry both times (thank god for ganache and tofu mousse :drool: ). The cakes call for three eggs and I use EnerG replacers instead, so maybe that takes away some of the moisture? And again, high altitude, perhaps I should be adding a little more water or milk or something to compensate.

But that's a new product I tried...the muffin and cake mixes...anyone ever tried them? If you've tried either, were your muffins chewy and/or your cakes dry? Thanks!

I've had some success making vegan cake :drool: with the Oetker mixes -- I just substituted EnerG egg replacer and soymilk. I'm not sure what you did differently. I've never tried the muffins. I did, however, attempt to 'veganize' the brownies and had a VERY odd texture (some combination of undercooked and burned to a crisp). Oh well -- I guess I'll just have to make my vegan brownies from scratch...

The cake mixes turn out okay for me, but the frosting mixes are always too thin and runny. :(

I've made the muffins, pancakes, and cornbread with no problems. I use Ener-G egg replacer and soymilk.

I have had their mixes before. I used applesauce in place of the eggs. I did not use any Ener-g egg replacer or milled flax seed. Their cakes come out mighty fine.

I highly suggest that if you are using Duncan Hines, or Betty Crapper, to try these mixes.

I don't think I've ever used their cake mixes, but the vanilla icing mix is yummy. It doesn't come out runny at all for me, it's very thick and creamy. I use coconut oil instead of the butter it calls for.
