With one eggplant, one bell pepper, two potatoes, snow peas, and a pack of tempeh.

(These things were purchased)

First, I made a stir fry of tempeh, carrots, pepper, and snow peas. (I always have a sack of carrots on hand) and when I want a plate of it, I'll throw on the instant rice.

Then I roasted slices of pepper, eggplant, and potatoes. With some veganaise, lettuce, carrot, and random tomato slices... And bread... I made sandwiches to take to work all week.

Then I had leftover potatoes, and random vegetable bits, and there's always a can of beans in the pantry... So I threw it all together with a few tex-mex spices and made burritos, too.

So for... five bucks of *organic* produce, I came out with variable lunch ideas for seven days, three dinner's worth of stir-fry, and a sound mind. :)

I love doing this once in a while... Taking a few ingredients and making an assortment of meals, to fridge for the next week or so.

That's a really good idea. I need to start doing things like that. I need to start being a COOK more, it's something a bit foreign to me.

I wish I could get motivated to do that. It's so hard to do much cooking other than at 3am when you share a smallish house and an even smaller kitchen with 8 or so other people. That refridgerator is just treacherous.. I imagine this will be much easier to do when/if I ever have my own kitchen. I'm so sick of eating just whatever happens to be lying around because the kitchen is too crowded or I'm too tired to cook something halfway decent after work. Today for dinner I seriously had carob raisins and pico de gallo tortilla chips. Charity, your post makes you sound like Jesus.. turning that itty bit o' food into all those meals.. lol, come over and cook for me :D

Heh. But I DID do that at three AM. I share a teensy weensy kitchen with three other people. I cook in the midde of the night and put the stuff in the fridge for the next day. I wouldn't be able to do it any other time!

I think I'll copy some of your ideas. I have been having the hardest time finding what to put in a sandwich now that deli meats are out. I think even my carni family would stop buying them if I could find alternatives that we all enjoy.
