FREAKING AWESOME pinto bean and cheeze patties

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1.5 cups toasted breadcrumbs, plus more for dredging
1 15 oz can pinto beans, drained and rinsed
1 cup Vegan Gourmet nacho or cheddar cheese, or your favorite vegan cheese, shredded
1 heaping handful chopped onions
1 small handful diced jalapenos
olive oil for shallow-frying
Instructions:

Mash beans with a fork. Add cheese, breadcrumbs, onions, and jalapenos, salt and peppre to taste, and mix well.
Form mixture into four large patties or eight small patties. Or however many patties you like. Dredge patties in breadcrumbs.
Heat a small amount of oil over medium-high heat. Fry patties until golden-brown and crisp on each side.
Devour all the patties and then walk around holding your big fat belly. Alternately, serve with salsa cruda or any Mexican-inspired salads.

Not the healthiest, but not too bad! It tastes like an amazing grilled cheese sandwich, except with fiber and phytonutrients.
