I've been buying Healthy Life's Whole Wheat bread for quite a while now. Just yesterday while I was at the store I saw they have a new Whole Wheat plus Flaxseeds bread out and thought I'd mention it here in case anyone is looking for something like that. Their breads are low-carb, no sat fat or trans fats and have more protein and fiber than most packaged grocery store breads and comparable in cost. There isn't enough Flax in each slice for you to stop taking supplements though.
I don't know if they are completely vegan or not. I have not wrote to the company to find out the source of all their ingredients (as some could be of plant or animal origin). But they don't contain any of the give-away ingredients like whey or buttermilk. Here are the ingredients pulled from Peapod.com (link (http://www.peapod.com/itemDetail.jhtml?NUM1=1110549981392):
