Roasted Red Pepper Cream Soup

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 tbsp. olive oil
3 cups chopped onions
6 red bell peppers
1/2 cup raw cashews
2 cups stock or water
2 tbsp. white miso
1 tbsp. balslimic vinegar
2 tbsp. mirin
2 tbsp. fresh chives
Salt and pepper


Instructions:

Saute onion on low for 20 minutes. Roast red peppers, cool and peel. Place 2 cups stocl in blender, add casewes. Blend till creamy and add onions. BGlend onions, cashews, and peppers. Add 2 cups stock, miso, mirin, salt and vinegar. Blend. Heat gently, garnish and serve hot or chilled.
