Veggie Restaurants in Salt Lake City

I noticed there aren't many people from Utah here, but I'm hoping someone can help me out. I'm gonna be in Salt Lake City for my birthday next monday and would really like to go out somewhere decent since we didn't get to go anywhere for our anniversary.
I went to happycow.net and found a few, like Coffee Under the Bridge and Evergreen Cafe but I don't know if they're any good.
If anybody could recommend a restaurant that is either vegan or vegetarian (it doesn't matter) it would be great!!

Could you go Sunday instead? If so, go to Sage's!!!

Thanks epski! I could go Sunday instead and that place is not too far from my hotel! I noticed on their website that they only have four entrees, I wonder if that's just a sample menu or if that's it?
