Vegetable Rice Pizza

This recipe is suitable for a: vegetarian diet.

Ingredients:

I think you could make this Vegan with appropriate substitutes, like 'Tofu-Rella' cheese and egg susbstitute, I just haven't tried)

500 ml (2 cups) cooked brown or white rice
1 egg, beaten
125 ml (1/2 cup) shredded cheddar cheese
50 ml (1/4 cup) tomato sauce
5 ml (1 tsp) Italian seasoning
1 ml (1/4 tsp) each garlic powder and black pepper
30 ml (2 tbsp) grated Parmesan cheese
250 ml (1 cup) grated mozzarella cheese
75 ml (1/3 cup) sliced fresh mushrooms
75 ml (1/3 cup) thinly sliced zucchini
50 ml (1/4 cup) sliced ripe olives
50 ml (1/4 cup) diced red pepper
15 ml (1 tbsp) chopped fresh parsley


Instructions:

In small bowl, combine rice, egg and cheddar cheese. Press into well greased 30 cm (12-inch) pizza pan. Bake at 400 C (200 F) 5 to 10 minutes, or until crust is lightly golden. In another small bowl, combine tomato sauce, Italian seasoning, garlic powder and black pepper; spread over crust. Sprinkle with Parmesan cheese.

Layer 1/2 the mozzarella cheese, mushrooms, zucchini, olives and red pepper. Top with remaining mozzarella cheese and parsley. Bake 8 to 10 minutes longer or until vegetables are tender crisp and cheese is melted.

Nice alternative to regular pizza or for those who might be allergic to wheat. My kids think it's a really fun and different idea...

iv hear dof all sorts of pizza-but rice pizza!!!???sounds weird to me... never mind, maybe il just have a try and post the result here. thanks for posting the recipe

I made this before, well something similar, I got it from one of Dr. Elson Haas's cookbooks, it was really good.

Mmmm, I love you. That is an awesome recipe! I just made it... with a few minor changes. No zucchini (don't like it), no peppers, parmeson, or mozzarella (don't have any). It's still really good. ^_^

u had me until the Zuchinni:spew: thats like the only veggie i dont like.but im still gonna try it without the zuchinni
