Pine nut and fruit rice

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

Ingredients:
-¼ cup pine nuts
-2 teaspoons olive oil(total)
-¾ cup chopped onion
-1 clove garlic, finely chopped
-1 medium tomato, chopped
-½ cup dark red beans
-½ cup raisins
-8-10 sun-dried apricots, sliced into thin strips
-¼ teaspoon pepper
-1 cup rice
Instructions:
-----------------------------------------------------
Directions: (To be better prepared, it’s best to separately chop onions, tomatoes, garlic, and apricots prior to cooking.)
-Add 1 teaspoon olive oil to the skillet, and toast pine nuts on medium heat until golden brown.
-Add onion and garlic; cook until onion is golden brown.
-Add 1 teaspoon olive oil, and stir in tomatoes and beans. (Remain on medium heat)
-While that is cooking, start cooking the rice in a separate pot.
-After 5 minutes, add the sliced apricots, and raisins to the skillet blend.
-Add ¼ teaspoon pepper, to taste.
-When rice is done, add that to the skillet blend, and mix evenly.
-Serve hot from the stove!
