I would just get baking and hope for the best, but that's just me :). How essential is it that the dough rises a lot? Could you get away with just baking-powder (or similair)?
ETA: or google for a recipe with the same ingredients minus the yeast.

Maybe I should just work with what I have. I don't think the dough's supposed to rise that much...it should just be soft and chewy, I suppose. But I've never made perogies before so I'm not really sure :p Then again, if I make something myself I'll usually eat it even if it's less than great just because I made it and that's an accomplishment in and of itself!

I used to eat the Mrs. T's ones a lot. I grew up in an area with a lot of Polish people, so they were fairly popular. I always knew them to be potato or sauerkraut (ick) -- meaty ones sound more like ravioli.
