My roommate likes to "detox" once a week by eating nothing but fruits and vegetables for two days.
Is this healthy?

Probably not.
She probably isn't getting enough protein, fats and some miscellaneous nutritents.
She is also "starving" herself and slowing down her metabolism.
She can't be that toxic that she needs to do that every week.

I agree with beforewisdom. Every week is too much. Maybe once a month wouldn't be too terrible. And if you are eating good whole, unprocessed foods you should be pretty clean anyway.

yeah dude, thats too often even if its good to do it now and then.. which i wouldnt think it would be. you could detox by avoiding all processed foods maybe?

i do a five day detox every three months. it's basicly this: all raw (nuts, seeds, etc), then faw fruits and veggies, then raw fruits, then fruits and veggies, then all raw (nuts seeds etc) and then cooked.
fasting can be good for you. I often do a day-fast once a week. This means i have breakfast before sunrise and dinner after sunset. both meals are fruits and veggies. During the day, i drink tea and water. i don't do anything physical that day either, except spiritual practice (kriya or cleansing practices, meditation, scriptural study, contemplation, restorative yoga, etc). So, it's careful.
but, it depends upon the person, what they do and what they're capable of, why they're doing things, etc. fasting, for me, is a spiritual practice--so it's part of my 'sunday' (which is not necessariyl on sundays). very important day for me. anyhoot.
