Thick Split Green Pea Soup

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 cup chopped onion
2 cloves garlic
2 tbsp vegetable oil
2 cups potato, peeled and chopped
1 cup turnip, peeled and chopped
5 cups water
1 cup split green peas
2 Tbsp amaranth
1 tbsp Braggs (or 1/2 tbsp soy sauce and leave out some salt)
1 tbsp vegetarian worchestshire sauce
2 bay leaves, crumbled
1 tsp oregano
1 tbsp onion powder
1 tbsp nutritional yeast
1/4 tsp pepper
1/2 tsp salt
Instructions:

In the bottom of a soup pot, fry the onions and garlic in the oil until clear.
Add remaining ingredients and bring to a boil. Cover, and reduce heat to medium-low. Simmer for about 45 minutes, or until the peas are cooked to your tastes.
In a blender or food processor, add 3/4 of the soup and blend until smooth. Pour back into the pot with remaining soup and serve immediately.

If you are serving people who are used to eating green pea soup cooked with a ham hock, up the salt to 1 tsp.
