Toasty Peanut Corn Snack

This recipe is suitable for a:
Ingredients:

1 Tbsp. Vegetable oil, up to 2 tbsp
2 cups Corn kernels, fresh, cut from ears or frozen, thawed (Though fresh works by FAR the best...)
2 cup unsalted, shelled Peanuts,
salt to taste
Instructions:

Works best in large non-stick, teflon type pan or a wok even.
Heat oil over medium heat. Swirl oil to completely coat pan bottom.
Pour corn kernels in the pan and cook, stirring continually until lightly browned. This takes a while - watch carefully to prevent burning and STIR often!
Reduce heat to low and cook about 5 minutes.
(Do not add more oil unless absolutely necessary to prevent sticking.) The corn should be very much on the dry side.
Remove from heat, add peanuts, season with salt to taste, and mix well.
Transfer to covered bowl or jar and refrigerate. Serve and eat as "trail mix" snack.

My kids love this hot and fresh made as a TV snack. Or in the fridge, they munch on handfulls as after school snacks - sometimes even putting in salads and such!
