Horchata

This recipe is suitable for a: vegetarian diet.

Ingredients:

1/4 cup raw white rice
1/4 cup almonds, toasted
3 cups water
2 cups sweetened vanilla-flavored non-dairy milk
2 teaspoons vanilla
1/2 teaspoon cinnamon


Instructions:
-----------------------------------------------------
Combine rice and almonds in blender and blend to a powder. Bring water to a boil, pour over powdered rice and almonds. Let soak 1 hour. Add remaining ingredients, stir, and refrigerate 3 to 4 hours. Strain. Serve cold over ice in tall glasses.

Makes 6 servings.

What exactly is raw rice? Just dried, uncooked? Or does it mean something else?

It just means uncooked rice.

I love Horchata...it used to be everywhere in AZ, but most if had milk in it. So, the people I worked with decided one of our cooking activities would be, to make horchata. I've been hooked ever since.

my fiancee loves it---me i just dont care for it--mostly because of the cinnamon---i just cant stand cinnamon at all---lol--he usually gets it when we are at our fave mexican restaurant--but would be easy to make at home too--thanx for the recipe--we are sooo gonna try this at home--well he will i dont cook or anything like that--lol

Uh oh. I made some of this stuff before I realized that you have to STRAIN it. What can I strain it with? I don't have one of those fancy smancy cloths... Will a paper towel work? :stinkeye: Crudola.

By the way, I've lived in Arizona my whole life and I've never heard of this stuff. :p Stupid mountain.

Mmm, I used to get horchatas all the time at the local taqueria. So yummy! I was under the impression that they were traditionally made with rice milk though, so I'm surprised that horchatas made with cow milk would be a big problem. By the way, I noticed the other day that Rice DReam has a prepackaged horchata out now. I'm planning to try it soon. I haven't had a good horchata in years! :cry: (I stopped going to that taqueria because they had quality issues.)

it's just sugary rice dream with cinnamon. not very good, imo, but i don't like rice dream.

It wasn't that the horchatas that I found in Phoenix were milk based...it's that they had milk ingredients in them. Like, it would be listed as milk fat or lactose or something stupid like that.. At the time, I hadn't seen the rice dream version anywhere. I haven't tried it, I still just make my own heh.

The gas station Quik Trip has an horchata smoothie that's tastylicious. Horchata is good blended with ice.

me and my daughter could live off this stuff....^_^ I always thought it was a "difficult and long process" to make this stuff, from what I was told, and therefore never looked up the recipe...lol...

I used to have it all the time in San Diego, and I've seen it in one restaurant on the East coast when I was driving back to florida from NC after picking up my daughter (she tried it in the mexi rest. and loved it, as I believed she would ^_^ It was a staple of my diet in SD while I was pregnant with her...LOL)
