Oatmeal Cookies

This recipe is suitable for a: vegetarian diet.
Ingredients:

1/2 cup vegan margarine
1-1/2 cups (15 ounces) applesauce
1/2 cup molasses or maple syrup
2 large ripe bananas, peeled
1-3/4 cups whole wheat pastry flour
1 teaspoon baking soda
I teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
3 cups rolled oats
1/2 cup raisins or chopped dates
Instructions:

Preheat oven to 400 degrees. Cream together margarine, applesauce, molasses or maple syrup, and bananas in a large bowl. Add remaining ingredients and mix well. Drop a rounded tablespoon of batter at a time on a lightly oiled cookie sheet. Bake 8 minutes at 400 degrees. Allow to cool before removing from cookie sheet.

Variation: Add chopped walnuts or chopped apples to batter.
Makes 40 cookies.
