Southern Fried Okra Patties

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

3 cups vegetable oil for frying
1 pound fresh okra, finely chopped
1 cup finely chopped onion
1/4 teaspoon ground black pepper or cayenne
1 teaspoon garlic salt
1/2 cup water
1 egg or equiv. egg replacer
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 cup stone ground cornmeal


Instructions:

Heat 1 inch of oil in a large skillet to 375 degrees F.
In a large bowl, mix together the okra, onion, salt, pepper, water and egg. It'll be gooey!
Mix together the flour, baking powder and cornmeal; and stir that into the okra mixture.
Carefully drop spoonfuls of the okra batter into the hot oil, and fry on each side until golden, about 2 minutes per side. Remove with a slotted spoon, and drain on paper towels.

I sometimes do this with zuchinni or borcolli and my kids love it - not the healthiest, but fun on occasion.

This sounds like a yummy way to use the really great fresh okra I get at my Indian grocery store. Do you think I could use a flax egg rather than something like NRG-egg replacer?

For some reason, Misq17, I am thinking flax egg would bind better, but I've never tried this recipe myself. (I do make okra cornbread however.)

The chopped up okra makes the mixture really "goopy" but I think flax would be fine here... I honestly posted this back when I was using eggs and I haven't made them since. They ARE good though, and I think worth trying with the flax mixture.

UPDATE:

I made these using 'Bob's Red Mill' egg-replacer in an amount equiv. to one egg.

They turned out JUST as yummy as before. I added cayenne, garlic and onion powder too - :drool:

They turned out JUST as yummy as before. I added cayenne, garlic and onion powder too - :drool:

I am gonna try it this way....sounds yummmerific:)

Non-organic fresh okra is $5 a pound at Whole Foods. I wonder if frozen would work?

I made these tonight with a one-pound bag of frozen okra and they were very good! I simply thawed the okra first then chopped/mashed it up before adding the other ingredients. I tried cooking the patties several different ways to save fat calories but in the end I discovered that if you want these suckers to come out right you just gotta bite the bullet and deep-fry them. Not an everyday food, but a real tasty treat for once in a while. :drool:

this is nice. I really like okra, but don't have many recipes to use it for. Thanks for sharing this recipe, it's really good. I've used egg though, was not able to find an egg replacer.
