Deluxe Oatmeal a la Nuker

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:
-----------------------------------------------------
Dry Mix (makes 16 servings):

4 1/2 cups rolled oats, plain
3/4 cup oat bran
1 cup Cream of Wheat-style cereal
1 cup wheat germ
1/4 whole flax seeds
1/4 ground flax seeds (or more whole ones)

Individual Serving:

1/2 cup dry mix
3/4 cup fortified milk
1 tbps brown sugar or maple syrup


Instructions:

Dry mix:

Mix all ingredients in a large container or bag. Before serving, shake well.

Individual Serving:

In a bowl, microwave individual serving ingredients on high 1 1/2 - 2 minutes*. Stir and cool slightly before eating. Also is great topped with fruit and yogurt.

*My nuker is old; yours may need a lot less time.


Additional comments:

Individual serving of dry mix contains approx 30% RDI iron, 58% zinc, and 17% folate. Add some fortified soy milk on top of that and you have a tasty multivitamin meal!

Store in a cool place for up to three weeks. For long-term storage, store in the fridge or freezer.

Krista, do you think if I throw this in a pyrex bowl for work, then use the boiling water from the water cooler and let it sit...that it would be ok? (like those instant cups of oatmeal and soup) Essentially you are nuking to get it boiling anyway right?

It looks so dang good and I'm going shopping this weekend :vebo:

Cover the bowl and it should be ok. Might take 3-4 minutes, though.

I nuke it b/c I prefer oatmeal made with milk instead of water. But, this way is fine, too.

I have an emergency stash of food at my desk at work for myself and anyone else that forgets a lunch.

I do that with a Oatmeal/oat bran mix - (add boiling water from the 'cooler') and I cover the bowl and let it sit about 5 minutes - quite a while... the oats are a teeny bit more 'chewy - not quite as creamy, but still it's really good!
If you run the oats thru the steel blade on your food processor before cooking, they turn out more soft and creamy too - more like those "Instant packets".

I think the cream-of-wheat may need to actually be boiled though - tried that (plain) a couple times with just ADDING the hot water and it was a solidified mass of gummy goo... very un-appetising and slimy...((shudder))

I think the flax seeds would work fine though too... I usually add dried fruit, cranberries or cherries - OH YUM!

Are the oats quick oats? I'm guessing from the cook time that they are (that's roughly the same microwave cooking time as my quick oats anyway...).

This post just reminded me that I forgot to buy Oat bran yet again. Arggh. I've been forgetting to buy it all week.
