Curry Veggies and Rice a la Nuker

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

3/4 cup white rice
1 1/4 cups water
1 14oz can beans (any kind, I prefer chickpea)
1 carrot, chopped
1/2 cup tomato, chopped (about 1 small)
1/2 cup mushrooms, chopped
1 tsp Braggs or 1/2 tsp soy sauce
1 tsp nutritional yeast
1/4 tsp chili powder
1/4 tsp onion powder
1 tsp salt
1 tbsp curry powder
Instructions:

Combine all ingredients in a microwave-safe pot and cook for 12-17 minutes (nukers vary, so start checking at 12 minutes), until rice is done. Let stand for 5 minutes.

If you want firmer tomatoes and mushrooms, add during the last 2 minutes of cooking.
