Jared's Pumpkin Pie

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 package Azumaya silken tofu drained.
1/2 cup vanilla rice breverage (I use Imagine Foods Rice Dream)
2 Tablespoons Captain Morgan spiced rum
1/4 cup 5 minute grits
1 teaspoon oatmeal
1 teaspoon vanilla
1 teaspoon sea salt
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 1/2 cups granulated vegan sugar
1 can (15 oz.) Pumpkin
2 unbaked 9-inch (4-cup volume) deep-dish pie shell (If using frozen, thaw first)


Instructions:

Put first 10 ingredents in blender and puree until smooth scraping edges of container. Slowly add the sugar and blend until incorperated. Add pumpkin until mixture is blended well.

Bake in preheated 425° F. for 15 minutes. Reduce temperature to 350° F.; bake for 40 to 50 minutes. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

Add vegan whipped cream if desired.
