Breakfast Casserole

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

3 cups cooked potatoes, mashed but not peeled
1-1/2 lbs. firm tofu, mashed
2 Tbsp. soy sauce
1 medium onion, chopped
2 cloves garlic, crushed
2 Tbsp. olive oil
2 Tbsp. parsley
2 Tbsp. basil
1/2 tsp. black pepper
Paprika


Instructions:

Mix together the potatoes, tofu, and soy sauce. Sauté the onion and garlic in the oil until translucent. Preheat the oven to 325°F. Mix the onion and garlic into the potato mixture, and add the parsley, basil, and black pepper. Spread into an oiled 8 x 8 x 2-inch baking dish. Sprinkle with paprika and bake for 35 minutes.

This looks awsome! I'm always trying to find ways to make breakfast with tofu and this is the first casserole that I've come across. I'm finding I like tofu instead of eggs in the morning - much lighter and easier on the stomach.

This looks really good but I'm not sure I would have time to make it in the mornings...I guess if I froze it in individual servings...

You could put it together the night before, store in the fridge overnight, and when you get up in the morning pop it in the oven. :)

To me it sounds like it would be yummy for dinner, too.

I am making this dish right now, it should be done in a few minutes.So far, it looks really yummy.Recipe was very easy. I added nutritional yeast for a cheesy tase. I will let everyone know later.:bobo:

I made this this morning and it was really good. :D It reminded me of something my dad used to make when I was young. Sort of a hash thing he would make with frozen diced potatoes and onions and green peppers and then eggs. I didnt mash the potatoes completely so they were kinda chunky but very good and was very filling. Ill be making this again :D

I made this on Sunday and I have to say, it was only ok for me.
I think that it was a little bland. If I made it again I would need to spice it up a little. Tofu and mashed potatoes are a little unflavorful for me.

I'm pretty sure nutritional yeast makes up for many sins. . .

Dasani, how much nutritional yeast did you add?

I've made something similar to this before a taking a long drive. This is a similar to a 'skiers breakfast' my mom used to make.

The trick is you make it up the night before and then put in the fridge. In the morning, you just throw it in the oven as you are getting showered/dressed and make coffee. In no time, you've got hot breakfast for everyone.

For mine, I cook up strips of fake bacon along with the onion and use more tofu than potato and add some creole spices and tumeric for bit of coloring as well as some worcesterhire sauce. I've also mixed in some grated vegan cheese to great effect.

I've got a long pre-dawn drive this Saturday so I think I'll make this up the night before :)
