catalonian canelloni

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

- a packed of canelloni pasta
- a packed of seitan
- 1 chopped onion
- 1 chopped redpepper
- 1 chopped carrot
- 2 chopped cloves of garlic
- tomato sauce
- a small glass of wine (optional)
- olive oil
- salt
- peper
- oregano
for the sauce:
- 1/2l of soy milk (or any other veggy milk)
- olive oil
- flour
- salt
- nutmeg
- grated soy mozarella cheese


Instructions:

first of all put some oil in a sauce pan and sauté the chopped onion. when its a little bit done, add the chopped pepper and carrot and let it cook untill its almost done (about 10minutes). after it add the wine, if you use it, wait untill its almost evaporated, then stir in the minced seitan. wait a minute and then add the tomato sauce and the oregano and cook in a low heat for about 5minutes. set aside.
meanwhile, boil the canelloni nodlees according to the package directions and drain.
preheat the oven to 350F.
when the nodlees are cold, put a tbsp of the minced seitan sauce in the middle of it and roll the nodlees to make a canelloni. do the same with all the nodlees.
for the sauce:
put some oil in a sauce pan and sauté the flour a little bit, then add the soy milk, salt and the nutmeg and stir it constantly untill its a little bit thick. set aside.

put all the canelloni in a oven proof shelf, pur the sauce over them, sprinkle soy mozarella cheese on it and put into the oven untill the cheese is golden brown.
