creamy tofu

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:
-----------------------------------------------------
14 oz. drained firm or extra firm tofu
1/2 cup nayonaise
1 Tbsp. lemon juice
2 tsp. tumeric
1/2 tsp. dry mustard
1/4 cup chopped chives or onion
2 celery ribs finely chopped
2 Tbsp. chopped fresh dill
sea salt and pepper


Instructions:

Allow tofu to drain approx. 15 minutes.
While tofu is draining, combine nayonaise, lemon juice, tumeric and mustard and whisk together.
Finely chop chives, celery and dill and set aside.
Squeeze drained tofu between fingers to make small curds.
Mix tofu with the nayonaise dressing.
Mix in chopped veggies.
Season to taste with sea salt and freshly milled black pepper.

This is a great vegan, egg-less egg salad and I can't get enough of it! Really, really good with toasted bread, pickle and whatever fresh greens you may have laying about (chard, basil, watercress, iceburg, romaine, etc.) Enjoy!
