Healthy tofu chocolate "ice cream"

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

one package silken tofu (16 oz)
4 tablespoons unsweetened cocoa powder
12 packets of sugar substitue or 3/4 cup of sugar
vanilla extract to taste


Instructions:
-----------------------------------------------------
Put all the ingredients into a blender and blenderize until smooth!! Taste test the mix, add more vegan sugar, chocolate or vanilla if needed. Put into freezer safe container and freeze to desired consistency. (I like to freeze mine until it is hard and then soften it a bit in the microwave). This is really good and really healthy!!!!

Nutrition info for 1/4 (made with vegan sugar substitute) (varies by brand of tofu): 70 calories, 3 grams of fat, 6 grams of protein

I love trying "tried-and-true" or "personal favorites" recipes from these boards, and this one was great! YUM!

I'm leery of the "cut and paste" recipes that seem rather impersonally posted with no comments - I have no idea if they're any good or not.

I made it in mine, but had to then let it "set" a LONG time and it didn't get real hard... (though in my experience most homemade ice creams don't)... I might put it in the regular freezer next time...

I'm putting mine in the regular freezer right now...we'll see what happens over the next couple of hours :)

We don't have an ice cream maker; had and "old fashioned motor-driven" one growing up and I know a lot about making it that way, but it's a lot of trouble and work.

Okay, just had a little of this nice and fudgy chocolate "ice cream" :)

It took a lot longer than two hours to set up by just freezing it in the freezer. Maybe in a deep freeze it would get frozen faster, but here, in our freezer section of our refrigerator it took eight hours. I think the only way to get it to freeze faster would be to pour the mix into a sheet pan/jellyroll pan (basically a cookie sheet with sides about 3/4" or 2cm tall.) I noticed in the round plastic container I used that the center remained liquidy even after two hours, and the mix was only about 2 inches (5cm) deep. But lessening the depth of the mix for freezing would help considerably, or having a freezer that gets a lot colder. Our sheetpans are too large for this freezer, so I will have to find something else to do this technique. Maybe with a plastic casserole container?

Anyway, I'll probably be enjoying this the rest of the week and weekend. I know I will make it again sometime :)

It was soooooo good I couldn't wait till it even froze properly.

You know, I make a healthy chocolate ice cream that my duaghter loves.

you need...

2-3 frozen bananas and 1/4-1/2 cup semisweet vegan choco chips and a blender/processor. My daughter LOVES this, and there's no refined or fake sugar involved.

MUST you use bananas in an otherwise perfectly good chocolate ice cream?

OK, so the sugar's not all that healthy and bananas would be... you try it and tell me if it's any good...

Could you freeze it in icepop molds, like fudgecicles? It could freeze solid and you wouldn't have trouble dishing in up.

made this last night (bought a new blender just for that!!!), the stuff never made it's way out of the blender though :D

100% cocoa powder is mega healthy with truck loads of antioxidants and stuff. I don't buy the ones with sugar. Oh, as a side note, I only used two packets of splenda instead of 12 in Annika's recipe, it seemed sweet enough though.

I just made this and as it was in the freezer, decided it would be better as a pudding. I discovered however that I did not sweeten this enough.

I used:

1 package silken tofu
4 tablespoons coca power (unsweetened)
3 bananas

I don't think I used enough bananas or something though becasue the coca powder is soooo bitter. How can I make it taste better?

CaptainSwab - fruit juice might help to sweeten it up if you really don't want to use sugar.

Anyway, I made this the other night and it is delicious! I may try adding some frozen strawberries next time. Ooh, or maybe some peanut butter for a chocolatey-peanut buttery, mouth is in heaven, ice cream.

Hee hee..... I will certainly let you know... Maybe this is a good little weekend project? We shall see.... I suspect you would not be able to actually taste the bananas, as the chocolate flavoring would overpower it. I will probably have you on the other end of the line so you can witness it. (*hugs*) :)

Yeah, so I hate bananas :stinkeye: ... I like lots of other things... :love: (Actually if the banana flavor's not too pronounced, I'd be willing to try it...)

I made a second batch, and this one I tried fully frozen, and then frozen adn slightly defrosted.

Bleh.

It lost the beautiful thick, rich, creamy texture my first batch had.
I say just freeze it for 1-2 hours and just eat it and an icy chocolate mousse.

Okay, so here's what I tried: 2 packages of silken tofu, 8 tablespoons of cocoa, and 4 bananas: The results were that this mixture was not quite sweet enough and definitely tasted like banana. The cocoa did not drown out that taste. I added 1/4 cup of sugar (for a doubled recipe with bananas added to sweeten it so this is really not so bad) and have been freezing it all night. I am so looking forward to coming home after work and having chocolate banana soy ice cream. Even though I did not try it directly, this is an awesome recipe! And very easy.

I just made some of this, then upon putting it in the freezer realized one thing, I forgot the vanilla. Crap. But as a second thought, some coconut extract next time might be extremely tasty.

This was so good. My aunt could not believe it wasn't dairy! I added some peanut butter and it hardened like icecream in my icecream maker very well. It probably could have gotten harder but I wanted it ASAP. :lick:

I think I'm dragging up an old thread but I just made some *drool* I put peanut butter in it also and my blender was having a hard time killing all the stuff so I put some chocolate soy milk in with it.

It's not done yet (in the freezer) but it tasted super good.

Also my mom reminded me it's not polite to use the blender at 2 am :p

This is a GOOD "old thread" though... I was meaning to try this again and had forgotten - now I think I will... I was thinking of doing Chocolate Raspberry.................
